Ingredients

  • 2 cups cooked chicken breasts, shredded or chopped
  • 2 ripe avocados, pitted and diced
  • 1/2 cup corn kernels (fresh, canned, or frozen)
  • 1/4 cup red onion, finely chopped
  • 2 tablespoons fresh cilantro, chopped
  • 2 tablespoons lime juice (fresh is best!)
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Shred or chop cooked chicken into bite-sized pieces.
  2. Dice avocados into creamy chunks.
  3. Combine chicken, avocados, corn, red onion, and cilantro in a large bowl.
  4. Whisk together lime juice, olive oil, salt, and pepper to create the dressing.
  5. Pour dressing over salad and gently mix to combine without smashing the avocados.
  6. Taste and adjust seasoning as needed.

Notes

For best freshness, add avocados just before serving and drizzle extra lime juice to prevent browning. Add chili flakes or diced jalapeño for a spicy kick.
