Ingredients
Scale
- 8 eggs – Scrambled to fluffy perfection.
- 4 croissants – Buttery, flaky, and a major upgrade from boring sandwich bread.
- 4 slices cooked bacon – Because bacon makes everything better.
- 4 slices pepper jack cheese – Just the right amount of melty, spicy goodness.
- ½ cup guacamole – Adds a creamy, fresh twist to balance the flavors.
- ½ cup garlic butter tomato sauce – The secret ingredient that makes this sandwich truly unforgettable.
Instructions
- Crack eggs into a bowl, whisk with a pinch of salt, and cook over medium heat in a buttered pan until fluffy and slightly creamy.
- Slice croissants in half and toast them lightly in a pan or toaster.
- Spread a layer of garlic butter tomato sauce on the bottom half of each croissant.
- Add a slice of pepper jack cheese while the croissants are still warm so it starts to melt.
- Layer scrambled eggs and crispy bacon (or swap for sausage patties if preferred).
- Finish with a generous scoop of guacamole on top.
- Top with the other half of the croissant, press gently, and enjoy!
Notes
For extra crunch, add toasted hash browns inside the sandwich. Spice it up with a few dashes of hot sauce or red pepper flakes. Make ahead: Wrap each sandwich in foil and store in the fridge. Reheat in the oven for 5-7 minutes at 350°F.
