- 1 cup fresh cherries, pitted and chopped
- 1/4 cup sugar
- 1/2 cup water
- 2 tablespoons cherry liqueur (or cherry juice)
- 1 cup heavy cream
- 8 oz mascarpone cheese
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- Ladyfingers (Savoiardi)
- 2 tablespoons cocoa powder
Instructions
- In a saucepan, combine cherries, sugar, and water over medium heat. Stir occasionally until sugar dissolves.
- Add cherry liqueur and simmer for 5-7 minutes until cherries soften and syrup thickens. Let cool completely.
- Whip heavy cream until soft peaks form.
- In another bowl, mix mascarpone cheese, powdered sugar, and vanilla extract until smooth.
- Fold whipped cream into mascarpone mixture gently to keep the texture light and fluffy.
- Dip ladyfingers quickly into the cooled cherry syrup and arrange a layer in the serving dish.
- Spread half of the mascarpone cream over the ladyfingers, followed by half the cooked cherries.
- Repeat layers, ending with mascarpone cream.
- Cover and refrigerate for at least 4 hours, preferably overnight.
- Before serving, dust with cocoa powder and garnish with fresh cherries if desired.
Notes
For best results, chill overnight to let the flavors meld beautifully. Use fresh cherries when possible for the best taste and texture.
