- 1 lb ground beef
- 2 cups diced potatoes
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 (14.5 oz) can diced tomatoes
- 3 cups beef broth
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Optional: 1/2 cup frozen peas
- Optional: Dash of hot sauce
- Optional: 1 bay leaf
Instructions
- In a large soup pot or Dutch oven, brown the ground beef over medium heat until fully cooked. Drain excess fat if needed.
- Add the chopped carrots, celery, and potatoes. Stir for a couple of minutes to coat them in the beef juices.
- Pour in the beef broth, canned tomatoes (with juice), Italian seasoning, and a pinch of salt and pepper. Bring to a gentle boil.
- Reduce heat, cover partially, and simmer for 25–30 minutes, until potatoes are fork-tender. Stir occasionally.
- Taste and adjust seasoning. Serve hot with your favorite crusty bread or a sprinkle of cheese.
Notes
For a thicker stew, mash a few potatoes right in the pot. Add garlic or onion when browning the beef for more depth. Leftovers taste even better the next day!
