Ingredients

  • 1 lb ground beef
  • 2 cups diced potatoes
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 (14.5 oz) can diced tomatoes
  • 3 cups beef broth
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Optional: 1/2 cup frozen peas
  • Optional: Dash of hot sauce
  • Optional: 1 bay leaf

Instructions

  1. In a large soup pot or Dutch oven, brown the ground beef over medium heat until fully cooked. Drain excess fat if needed.
  2. Add the chopped carrots, celery, and potatoes. Stir for a couple of minutes to coat them in the beef juices.
  3. Pour in the beef broth, canned tomatoes (with juice), Italian seasoning, and a pinch of salt and pepper. Bring to a gentle boil.
  4. Reduce heat, cover partially, and simmer for 25–30 minutes, until potatoes are fork-tender. Stir occasionally.
  5. Taste and adjust seasoning. Serve hot with your favorite crusty bread or a sprinkle of cheese.

Notes

For a thicker stew, mash a few potatoes right in the pot. Add garlic or onion when browning the beef for more depth. Leftovers taste even better the next day!
