Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar

  • 1 can (20 oz) crushed pineapple, drained
  • 1 cup sour cream
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Powdered sugar, for dusting

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease or line a 9×13-inch baking pan with parchment paper.
  2. In a medium bowl, mix flour, sugar, and softened butter until crumbly. Press into the pan and bake for 15 minutes until lightly golden.
  3. In another bowl, whisk eggs, sugar, vanilla, and sour cream. Fold in drained crushed pineapple.
  4. Pour filling over crust and spread evenly. Bake for 25–30 minutes, or until the center is just set.
  5. Let cool completely. Dust with powdered sugar and slice into bars before serving.

Notes

Add lemon zest to the filling for extra zing. Greek yogurt can replace sour cream. You can use a pre-made shortbread crust for convenience, and shredded coconut makes a great topping twist.
