Instructions
- Shred or chop cooked chicken into bite-sized pieces.
- Dice avocados into creamy chunks.
- Combine chicken, avocados, corn, red onion, and cilantro in a large bowl.
- Whisk together lime juice, olive oil, salt, and pepper to create the dressing.
- Pour dressing over salad and gently mix to combine without smashing the avocados.
- Taste and adjust seasoning as needed.
Notes
For best freshness, add avocados just before serving and drizzle extra lime juice to prevent browning. Add chili flakes or diced jalapeño for a spicy kick.
